Method
  1. Cut the feta into cubes. Use a sharp knife to obtain uniform cubes. Place the Islos Feta in the refrigerator for a few minutes before cutting if it is too crumbly, to firm it up slightly.

  2. Wash, peel and cut the cucumber into small pieces- either into small cubes or thin slices.

  3. Make melon balls. Use a melon baller to scoop balls. If you don’t have a melon scooper, cut the melon into small cubes.

  4. Rinse strawberries and cut them in quarters.

  5. Place all fruits in a bowl.

  6. Make a simple vinaigrette by whisking together olive oil and balsamic vinegar.

  7. Drizzle it over the salad and top with fresh mint leaves.

  8. Season with a pinch of salt and pepper, just before serving.
