Preheat your oven to 180°C (350°F)
Place the slices of bread on a baking sheet. Drizzle a little olive oil over each slice. Put a slice of Chavroux log on each slice of bread. Drizzle honey over the goat cheese. Place the baking sheet in the oven and bake for about 10-15 minutes, or until the bread is toasted and the cheese is slightly melted
Arrange a handful of mixed salad in a bowl
Place the baked Chavroux toasts on top
Drizzle a little olive oil and balsamic vinegar over the salad
Add the tomato slices on top. Scatter the chopped cashews over the top. Sprinkle a little salt and pepper and it’s ready to serve!

A handful of baby tomatoes, sliced
50g cashews, roughly chopped
