Finely grate the courgette, then place in a colander. Tip: Lightly salt the grates courgette and let it sit for 10 minutes to draw the excess water. Then squeeze it between your hands or in a clean cloth to remove the excess water. This prevents the fritters from becoming too soggy.
Finely slice the onion, then sauté it over low heat in a pan with a drizzle of olive oil unit soften. While the onion is cooking, dice the Saint Agur Blue Cheese.
